Tiramisu is one of Italy’s most iconic desserts, but not all tiramisu is made the same. At Ristorante Illando, we make ours with delicate Italian Pavesini cookies instead of traditional ladyfingers.
Pavesini are thinner, lighter, and crispier, which gives our tiramisu a softer, silkier texture once they’re soaked in espresso and layered with mascarpone cream. The result is less cakey, more delicate, and incredibly smooth.
